Excellent food book that isn‘t a typical cookbook in that it teaches you the how and why of these 3 key ingredients and the action of heat so you can fix problem recipes, improve on daily dishes, and become a better cook originating your own recipes.
I would suggest a text copy of this book as it contains charts and lists not available on audio. 🙁

JamieArc I really enjoy the Netflix series. There‘s one episode for each component, and I‘m sure like the book, it‘s really well done. Who knew salt could be so fascinating? 1w

Can‘t focus on my paper book with the child shouting in the pool and her mom‘s tinny cell phone music (what about pool rooms makes them so echoey?), but Bose noise-cancelling headphones make it at least marginally possible to listen to an audiobook until I have the space to myself 🤞🏻

If you‘re fascinated by cooking, this one is for you. My only complaint is that I wish I‘d read a hardcopy so I could make notes from all of her advice. If you enjoy the book, I highly recommend checking out the Netflix series of the same name. I love that even more!

More @24in48 this time a food-related challenge. My current go-to, much-recommended favorite food related book is Salt Fat Acid Heat by the completely charming Samin Nosrat. I adore cookbooks that are more than a collection of recipes. Here, Nosrat shares her personal history entwined with the histories of saltfatacidheat in cooking. Just a gorgeous book, and the Netflix series is one of the best food shows I‘ve ever seen.

Watching the Heat episode with a friend via rabb.it while prepping squid for my first ever attempt at calamari. I‘m starting to feel more confident in my own knowledge — the fact that I do, in fact, *have* knowledge, not just wild guesses — and so am trying not to rely so heavily on precise recipes. Definitely leftovers sandwiches. Which requires that I ask, is it a sandwich if it only has one slice of bread? What if it‘s tube-shaped? I‘ll leave sandwich cube theory to others, just let me have my turkey, stuffing, gravy, and, in this case, pomegranate open-faced sandwich in peace (jellied cranberry sauce would generally be the topper, but the pom arils are close-tasting and delicious, and add a bit of crunch) #holidaygratitudechallenge

julesG Since German bread is generally NOT square in shape and we seldom top a slice of bread off with another slice of bread, this is a sandwich in my world. 6mo

Saving for future reference... also, she uses six full eggs and two yolks, where the recipe I‘ve been using is 4 whole and two yolks. Theirs looks sooooo much silkier than mine.

I wanted to love the instructional section that takes up the 1st half of the book, but it was very wordy and a chore to get through. Love the 2nd half with the recipes. Best Caesar dressing I‘ve ever had!

This was EXCELLENT and definitely one I‘ll be coming back to regularly as a reference. I wasn‘t sure audio was the right format but Nosrat reads it beautifully. I‘ll be buying the hard copy though, for sure.

These In ‘N Out burgers my husband and I ate yesterday fresh off the plane in San Fran make an excellent use of salt, fat, acid and heat 😆 I‘m so exited to be touring around Big Sur, Napa and Sonoma for the next week! Vacation time! 🤗

#bookhaul from yesterday!!

I hate when book stores put stickers on their covers THAT WONT COME OFF! Anyone know any special tricks? The “book club” sticker on the female persuasion won‘t peel off easily 😭

TK-421 I've heard some people use a hairdryer to warm up the glue so it comes off easier, but I've never tried it. I don't recommend using rubbing alcohol & scratching it off with a fingernail! I've tried that & it didn't end well 😳 1y

Skyrimir I usually just have to heat it up and just peel it off using my hands. I‘ve never had to use a razor or anything! You could always try it on the lower heat setting and make sure to hold the hair dryer a good distance from the book of you‘re nervous! 1y

More of a manual than a cookbook, this book offers the tools to become a competent cook without needing to consult a recipe. During Thanksgiving prep, my husband told me to take my coughing back to bed. Just give me the recipe for the relish, stuffing and gravy, he said. But I don't have one, I protested, I just cook it. Meanwhile, McNaughton's sketch-y, free-form illustrations have brought to life concepts difficult to capture any other way.

This was super fun. Lots of basics/things I should‘ve known/things I knew but forgot; great graphics and illustrations; and some very practical recipes, many of which have a bunch of possible variations that integrate culturally diverse flavors. (I can‘t wait to make pretty much every one of her 10+ versions of herb salsa. 😋)

balletbookworm I learned ages ago that I kind of needed “real food” during @deweysreadathon unless I wanted a case of 1am indigestion and nausea. So I cook one meal ahead of time or crock pot a stew and eat fruits and veggies or trail mix as a snack. But for salty nibbles I turn to my trusty box of Wheat Thins. They never let me down. #30daysofreadathon 2y

"Use salt to enhance, fat to carry, and acid to balance flavour." The first half covers the basic elements, presented with warmth & encouragement; the second is classic recipes with lots of suggestions for variations. "Recipes do not make food taste good; people do." Fold-out charts are packed with information. This would be a great gift for anyone wanting to learn to cook, or who doesn't feel confident about improvisation in the kitchen. Love it!
