Salt, Fat, Acid, Heat
Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking | Samin Nosrat
A visionary new master class in cooking that distills decades of professional experience into just four simple elements, from the woman declared Americas next great cooking teacher by Alice Waters. In the tradition of The Joy of Cooking and How to Cook Everything comes Salt, Fat, Acid, Heat, an ambitious new approach to cooking by a major new culinary voice. Chef and writer Samin Nosrat has taught everyone from professional chefs to middle school kids to author Michael Pollan to cook using her revolutionary, yet simple, philosophy. Master the use of just four elementsSalt, which enhances flavor; Fat, which delivers flavor and generates texture; Acid, which balances flavor; and Heat, which ultimately determines the texture of foodand anything you cook will be delicious. By explaining the hows and whys of good cooking, Salt, Fat, Acid, Heat will teach and inspire a new generation of cooks how to confidently make better decisions in the kitchen and cook delicious meals with any ingredients, anywhere, at any time. Echoing Samins own journey from culinary novice to award-winning chef, Salt, Fat Acid, Heat immediately bridges the gap between home and professional kitchens. With charming narrative, illustrated walkthroughs, and a lighthearted approach to kitchen science, Samin demystifies the four elements of good cooking for everyone. Refer to the canon of 100 essential recipesand dozens of variationsto put the lessons into practice and make bright, balanced vinaigrettes, perfectly caramelized roast vegetables, tender braised meats, and light, flaky pastry doughs. Featuring 150 illustrations and infographics that reveal an atlas to the world of flavor by renowned illustrator Wendy MacNaughton, Salt, Fat, Acid, Heat will be your compass in the kitchen. Destined to be a classic, it just might be the last cookbook youll ever need. With a foreword by Michael Pollan.

I need to get this book! The doc series is my new bff while still at home sick doing ironing. I‘ve never ‘studied‘ cooking, the teaching at school was pretty awful, and I‘ve battled disordered eating in different guises for a long time. I try to cook but I feel like I‘m missing so much background knowledge, it‘s hard for me to learn from recipes. This broad background to how flavours work and why cooking works how it does is a godsend to me

tjwill Same here! I loved watching the series, so I need her book! I worked in restaurants for several years, so I learned cooking skills, but I still need to work on making healthy choices! 2mo

Finally! Knowledge of the key elements in cooking (and baking!) and presented in straightforward language for anyone to follow.

I'm all about using what's on hand or locally available for economical and sustainable reasons. This book gives you the confidence to wing every meal so that you're not beholden to a recipe book.

wanderinglynn I clearly need this book! Stacked! 2mo
taraWritesSci @wanderinglynn The second half of the book has recipes that the author advises to use "as training wheels" but then to go forth and cook freely. ? 2mo
wanderinglynn Good to know. I suck at recipes mainly because I never have the right ingredients & don‘t want to have to buy a bunch of extra stuff. It‘s hard to cook for just one. 2mo

Bit of a splurge today but I'm really happy with my selection.

Also, this issue of pompom directly responds to the problem of white supremacy flooding the art and craft world with it's call to action in the editorial section, and vow of inclusivity (race, age, and accessibility for starters).

Excellent food book that isn‘t a typical cookbook in that it teaches you the how and why of these 3 key ingredients and the action of heat so you can fix problem recipes, improve on daily dishes, and become a better cook originating your own recipes.
I would suggest a text copy of this book as it contains charts and lists not available on audio. 🙁

JamieArc I really enjoy the Netflix series. There‘s one episode for each component, and I‘m sure like the book, it‘s really well done. Who knew salt could be so fascinating? 4mo
Dolly @JamieArc Excellent choice for videos! For those wishing to cobble together refrigerator contents like me, I love having the knowledge to “wing it” with the appropriate fat, for instance, for a given culture. 4mo

More @24in48 this time a food-related challenge. My current go-to, much-recommended favorite food related book is Salt Fat Acid Heat by the completely charming Samin Nosrat. I adore cookbooks that are more than a collection of recipes. Here, Nosrat shares her personal history entwined with the histories of saltfatacidheat in cooking. Just a gorgeous book, and the Netflix series is one of the best food shows I‘ve ever seen.

Definitely leftovers sandwiches. Which requires that I ask, is it a sandwich if it only has one slice of bread? What if it‘s tube-shaped? I‘ll leave sandwich cube theory to others, just let me have my turkey, stuffing, gravy, and, in this case, pomegranate open-faced sandwich in peace (jellied cranberry sauce would generally be the topper, but the pom arils are close-tasting and delicious, and add a bit of crunch) #holidaygratitudechallenge

julesG Since German bread is generally NOT square in shape and we seldom top a slice of bread off with another slice of bread, this is a sandwich in my world. 10mo
kgriffith @julesG Noted! I feel like I should keep track of answers somewhere 😏 10mo
