Salt, Fat, Acid, Heat
Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking | Samin Nosrat
A visionary new master class in cooking that distills decades of professional experience into just four simple elements, from the woman declared Americas next great cooking teacher by Alice Waters. In the tradition of The Joy of Cooking and How to Cook Everything comes Salt, Fat, Acid, Heat, an ambitious new approach to cooking by a major new culinary voice. Chef and writer Samin Nosrat has taught everyone from professional chefs to middle school kids to author Michael Pollan to cook using her revolutionary, yet simple, philosophy. Master the use of just four elementsSalt, which enhances flavor; Fat, which delivers flavor and generates texture; Acid, which balances flavor; and Heat, which ultimately determines the texture of foodand anything you cook will be delicious. By explaining the hows and whys of good cooking, Salt, Fat, Acid, Heat will teach and inspire a new generation of cooks how to confidently make better decisions in the kitchen and cook delicious meals with any ingredients, anywhere, at any time. Echoing Samins own journey from culinary novice to award-winning chef, Salt, Fat Acid, Heat immediately bridges the gap between home and professional kitchens. With charming narrative, illustrated walkthroughs, and a lighthearted approach to kitchen science, Samin demystifies the four elements of good cooking for everyone. Refer to the canon of 100 essential recipesand dozens of variationsto put the lessons into practice and make bright, balanced vinaigrettes, perfectly caramelized roast vegetables, tender braised meats, and light, flaky pastry doughs. Featuring 150 illustrations and infographics that reveal an atlas to the world of flavor by renowned illustrator Wendy MacNaughton, Salt, Fat, Acid, Heat will be your compass in the kitchen. Destined to be a classic, it just might be the last cookbook youll ever need. With a foreword by Michael Pollan.

#2021Book118
I am never going to be a chef, or even a good cook. But, just as I love to watch shows about cooking, I love to read about cooking. I don't plan to ever put anything I learn into practice, but that doesn't mean I don't want to learn about it.

I admit it. I like cookery books more than I like actual cooking. I probably spend more time BUYING cookery books than I spend cooking! I've wanted the tagged book for a while & it will probably be my next purchase.

What are your favourite cookery books, fellow Littens?

reading_rainbow Same lol 😅 1y
LeslieO Same! 😜 1y
5feet.of.fury I haven‘t read this but I watched the Netflix show. I don‘t normally do cookery reading, but cooking/travel food shows are my faaaave 1y

Tamra I enjoy reading cookbooks too, especially ethnic/regional ones. I do cook from them and a favorite is hard to pinpoint! I‘d have to put them into “best of” categories. 😅 I would say I couldn‘t do without 1y
ErinSueMreads Sameeeee. Salt fat acid heat is so so so cool thought. Well worth the money 1y
Maike Salt Fat Acid Heat is sooo good! My favourites are the Ottolenghi books, everything I‘ve tried so far is really yummy. 1y
Prairiegirl_reading This is sooo good!! I‘ve only tried a couple of the recipes but they are fantastic! Even if you don‘t really want to cook they are worth trying. I adore Jacques Pepin, the books and his shows, videos on Facebook…. 💜💜 1y
Librariana So my husband and I have a small collection of the Pioneer Woman cookbooks... and I think we've only cooked ONE mac n' cheese recipe out of them! And we're also totally obsessed with the chocolate chip cookies in 1y
Lauram I‘ll never have the time to make all the recipes I want to try. Yet, I keep buying more cookbooks. 1y
SaunteringVaguelyDownwards Got my husband this book for Valentine's Day, and he's been cooking his way through various recipes. Tonight's dinner: chorizo from scratch, ground from a pork shoulder and seasoned, and then made into tacos. 1y

I really like this cookbook. It‘s readable and lovely and full of good information that has improved my cooking. I give it 5 Stars. Samin Nosrat‘s voice is so strong and fun to read. It really is like watching the Netflix series based on this cookbook. And the illustrations are just fantastic. So it totally makes sense to me that this book is highly rated on GoodReads. I‘m looking forward to re-reading and trying the recipes in the coming months.

This was brilliant, as expected. It also made me realize that, though I love cooking & cooking from cookbooks, I never actually read cookbooks. Do you have any cookbooks you‘ve actually read & enjoyed? I feel like I need more of that in my life.

Verdict on two similar cake recipes: Samin Nosrat is the winner by a slight margin with Lori‘s Chocolate Midnight Cake. The biggest difference in the end result has to do with prep method. Crazy Chocolate Cake is done in one bowl so it‘s very quick to make. Light-coloured crumbs showed that mixing was not thoroughly done. It rose higher, was slightly sweeter and less moist than LMCC. LMCC used more bowls & implements; results are worth it.

Lindy For bakers with inquiring minds, I made an apple juice reduction caramel to join the two layers, and then a simple ganache icing. (edited) 2y
Soubhiville Mmmmmmm 2y

readordierachel Apple juice reduction caramel sounds amazing! Though I must admit that caramel is my nemesis. 2y
Sace That Caramel reduction sound like the real winner. And that tea cozy 😍 2y
Reggie 😋Apple juice reduction caramel! Lol everything sounds so delicious! 2y
Lindy @Sace I made the tea cozy from a vintage pattern sent to me by @LeahBergen ; in one of my Litsy photos, she recognized the pattern in a cozy I‘d purchased in Dunedin, NZ in 2002. That one was getting rather shabby from use. 2y
Sace @Lindy What a lovely knitting story! ❤️ 2y
Lindy @TheKidUpstairs It was a dear friend‘s birthday. Indoor gatherings are fraught, so there were only 4 of us (2 couples). We sang happy birthday very softly. Heather removed each of the (oversized) candles individually to blow them out without blowing on the cake itself. Friendship is one of the best things in life. 2y
Lindy @readordierachel @Sace @Reggie Apple juice caramel is so easy (and I have many litres of juice from my tree, currently in the freezer). Boil 4 cups of juice until only a half cup is left, then stir in 2 tablespoons of butter and a pinch of salt. 2y

I would never have found this book without Litsy, so thank you to everyone who reviewed it - I absolutely loved this one! I am not an instinctive cook, so the way this book breaks down cooking to four basic elements really appealed to me. Definitely see myself referencing this one regularly.

Bonus: picture of my messy pantry!! 😁

#BookReport - This week got a little crazy, but I still managed to wedge some reading in!! I read the first two books from the David Raker series, but decided not to continue on. While decent mysteries - and I like Raker as a character - both books were about a completely sadistic psychopath and just... sometimes people who disappear haven't been kidnapped by someone who likes to chop people up, you know? I bailed on The Castle in the Attic, ⬇

TheAromaofBooks (cont'd) it wasn't a bad book, it just wasn't for me. I've owned it since 2004, so at least it can finally head off to the giveaway bin! Just started House of Dreams this morning, and I'm still working on the tagged book and P&P, although I'm pretty behind on the latter!! Work is still ramping up, so I probably need to adjust my reading expectations somewhat...

@Cinfhen
2y
rabbitprincess I can‘t read books about creepy serial killers anymore, especially if the book spends a lot of time in their head 😕 2y
TheAromaofBooks @rabbitprincess - Same!! Luckily these didn't really spend a lot of time with the killer, and they didn't get overall graphic with the details but still... I just wasn't expecting a protagonist who looks for missing people to only find the missing people at the mercy of creepy serial killers! 2y
Cinfhen I‘m totally with you on letting certain books/series go....as we evolve and grow so do our reading choices🧡 2y

When dinner happens to coincide with the section of the cook book I am currently reading! Hubby picked dinner tonight:

Him: We‘re having Irish Stew
Me: Yay! I just read about the correct way to brown meats and make stew. We‘ve been doing it all wrong.
Him: Ok
Me: You‘re doing it incorrectly right NOW
Him: Do you want to make dinner tonight?
Me: 🤐🤣

ljuliel Doggone ! You‘re married to someone who cooks ? If my husband made supper, we‘d have pop tarts. 3y
Nebklvr Bless your hubby. Sounds like you two have a good time! 3y
4thhouseontheleft @ljuliel 🤣🤣 Yep! We share all household duties. And we each have dishes that we make better than the other. He does lamb, beef, seafood and pork really well. eanderson 🤣 This sounds like a conversation in my house. 3y
4thhouseontheleft @Nebklvr We do. 🥰 @eanderson 🤣🤣 3y
ljuliel That is NIFTY. When the Hubster retires ,we will split all the household chores 50/50 .I‘m not sure 🤔 how they will be designated yet, but if he gets to retire, so do I. I highly doubt he will cook . In 42.5 years, he has made himself hotdogs once. He waited for the water to boil before placing them in the pan. He made Mac and cheese once and put the macaroni into cold water, THEN sat it on the stove to cook. CRUNCHY. He can have dishes.I‘ll cook 3y
Crazeedi @ljuliel my hubby would cook if I let him, but I would have a big mess to clean up so I do the cooking, unless I'm sick. 🙄 3y
4thhouseontheleft @ljuliel sounds like he needs to sign up for a cooking class. 😄 Don‘t be an enabler! 😇 It‘s not rocket science. When my mom was diagnosed with BC and started treatment 2 yrs ago, I had a come to Jesus moment with my dad. Told him he HAD to learn some basic cooking skills, or else. He did. 😄 3y
ljuliel @Crazeedi Well, I‘ll give him a gold star for trying. 🌟. You should tell him whoever cooks also does dishes ! 3y
ljuliel I‘ve already told him ANYONE can cook. Especially in today‘s world. Directions are on everything ! Even frozen pizzas say : remove plastic before placing in oven. Do not eat before cooking. . *I have yet to meet anyone who would start gnawing on a frozen pizza straight out of the freezer * 3y
Crazeedi @ljuliel have you seen his attempts to "clean up" the kitchen? I have and it's not pretty! Lol 3y
ljuliel And good for you for giving your dad a talking-to about helping out ! ♥️ 3y
Crazeedi @ljuliel I have to say when I dont feel like cooking hes fine with finding something to eat! 3y
ljuliel @Crazeedi Gosh, it must be bad. I‘m wondering how he makes a worse mess by washing dishes. Does he flood the kitchen sink ? 3y
ljuliel @Crazeedi My husband has said that a few times, but then he either doesn‘t eat , or he eats a sack of pretzels. 😱 3y
Crazeedi @ljuliel he just doesn't see everything to wipe up! But I appreciate that hes willing to feed himself!! 3y
4thhouseontheleft @ljuliel honestly, he didn‘t have a choice. I live 9 hrs away. It was either step up, or step out. 💪🏼 3y
ljuliel Yes, we‘ll give him a gold star for that 🌟 @crazeedi 3y
ljuliel @4thhouseontheleft That‘s great that you‘re such a good daughter. Most couples our age ( 60s) , that I know of, the Little Woman is still the housewife, while the man is a bit like Archie Bunker. Comes home, sits down, and waits for supper. My husband isn‘t that crabby ( in fact, I‘m more like Archie 🤨) , but I‘m a combo Archie and Edith. Although I can sit wherever I want and don‘t allow him to boss me around . I DO sing like Edith. 3y

12/15 #jumpstart2020 @Clwojick @Lizpixie

Probably the best food book I‘ve read?? I never did home economics or properly learned to cook, so trying to follow recipes as an adult has me going ‘how much is a pinch? When is chicken done? What does ‘done‘ look like‘. This book is the background and answer to everything I felt like I was missing, and Samin feels like a new bff, she‘s never judgemental of the most absolute beginners, and very funny.

rockpools This sounds quite intriguing- I may have to give it a go! 3y

Weaponxgirl @Emilymdxn I bought it for mine since we have different styles of cooking, he likes to follow a recipe and I‘m normally going it‘s just a guide so I thought him learning the techniques of winging it would be fun for him. 3y
Weaponxgirl @Emilymdxn oh hell yea I love looking at others reading lists! And the groups they are in ect. 3y
Emilymdxn @Weaponxgirl Matt and I are total opposites too - I prefer baking and like to measure everything very carefully exactly as I‘m told whereas he likes throwing whatever he fancies in a pan and seeing what happens. We both produce nice but totally separate things! I‘m quite academic about it and refuse to improvise in case it goes wrong 🙅‍♀️ 3y

I finished up the Salt section in the book, and discovered so many practical and useful tips. I 💜 the illustrations, which are beautiful, humorous, and helpful!

I can‘t wait to try out her suggestion to simmer potatoes in salted water before roasting them to help diffuse the flavor through the whole potato (rather than having all the seasoning concentrated in the skin/surface.

Cinfhen That book looks really good! I think the illustrations add an extra element ( no pun intended 😉) 3y
4thhouseontheleft @Cinfhen I love that it goes in depth into food science, which I know nothing about. She explains how and why an element (in this chapter, salt), used at a certain time in a specific way, changes the chemical properties of the food to make it taste better. It also coincides with 6th grade science for Maya, she was studying physical and chemical changes earlier this year! 🤣 3y
kgriffith Also highly recommend the 4 part documentary on Netflix if you haven‘t already watched it, it‘s wonderful! I have the book and also the collection of illustrations that came out last year, just need to figure out how and where to put them with limited wall space 😊 3y

gradcat This book is looks really interesting, in addition to being so nice to look at...I may have to read this for my “live-and-learn” prompt. Thanks for the lovely review! 🧂♥️👍 3y
4thhouseontheleft @kgriffith I plan on watching the first episode tomorrow! But I didn‘t know there is a collection of illustrations! 3y
SW-T You‘ll be pleased with your roasted potatoes. 😊 I couldn‘t believe the difference her tips made in my pasta, roasted potatoes, and roasted chicken. 3y
WJCintron It looks like a great book! I just added it to my stack! 👍😃 3y
janeycanuck I bought this a while ago but haven‘t picked it up yet - or even thumbed through it. I had no idea it was illustrated! Did you watch her Netflix series? 3y
4thhouseontheleft @janeycanuck I just started the Netflix series! I‘m watching each episode after I read the corresponding chapter. 3y
janeycanuck @4thhouseontheleft ooh, good idea! 3y

#WeeklyForecast

This coming week seems to be all about nonfiction and graphic novels! Starting my #LiveandLearn book soon, and need some GN to balance it out.

Poor Anna Kendrick has been languishing! With hubby and Maya home, I don‘t really do #audiochores or #audiowalks, now that everyone is heading back to work/school, I‘ll have more opportunities for 🎧📖

MidnightBookGirl Those are two great audiobooks! I start a new job on Monday, so I won't have as much time for physical reading, but I plan on listening to a lot of audiobooks because my drive will get long again. 3y
4thhouseontheleft @MidnightBookGirl I‘m actually reading the physical book for Educated. They are both in progress, but only Kendrick‘s is audio, although I know my graphic looks confusing! Good luck on the new job! 🥳 3y
4thhouseontheleft @MidnightBookGirl I have a hard time listening to audio and driving, so while I spend a lot of time in my car many weeks, I don‘t usually listen to books because I won‘t retain any of it. Jealous of those who can! 3y
Scochrane26 I‘m not a huge fan of GN, but I see the WW one & think I would like it. I really liked Warbringer in novel form. The March one looks good, too. 3y
4thhouseontheleft @Scochrane26 It follows the novel closely. 3y

I‘m not that far into this book yet, it‘s going quite slow as big hardbacks are a bit painful and slow for me to read with my pain in my wrists, so it‘s kinda a treat reading something like this! I‘m absolutely in love with the gorgeous illustrations and playful but very informative writing style, I‘m learning so much

It‘s a tradition in my family to open one present each in the evening on Christmas Eve and this was mine! I‘ve wanted this for ages and not been able to afford it so I‘m so happy. I‘ve always wanted a proper home economics education in how cooking works and why, I‘m not a great cook but I aspire to get better!

We opened gifts with my parents over Facetime yesterday, and one of my gifts will be my pick for #booked2020 #LiveandLearn!

While I have known how to cook for years, I have never delved into the science and principles of it all. I look forward to learning the elements of cooking, rather than blindly following recipes or making shit up as I go, hoping it turns out well without really understanding the why behind it all. #bookhaul

LeahBergen Lovely gifts! 3y
SW-T Excellent book! I totally fell in love with it. 3y
Amandajoy There‘s actually a continuing education course for my job I can take on the Samin Nosrat book that I‘m planning on doing next year. I think it will help me dive into it more. 3y
4thhouseontheleft @Amandajoy That‘s really neat! She also has a show on Netflix I plan on watching. 3y
BarbaraTheBibliophage Exciting!!! Enjoy! 3y

Bus book #3! (I don‘t think I‘ll be able to finish #4.) I hate cooking (for many reasons). But after reading this book, I‘m excited about looking at the chore of cooking with a renewed interest! The writing makes every kind of cooking seem so achievable. And the illustrations are so so so charming. 🍏🍅🧄🥔🥐

ScientistSam @Blaire no, but I'm looking forward to it! 3y
Blaire @Mitch @scientistsam yes, it‘s four episodes on nextflix, she goes to a different country to dive into one of the 4 elements - Italy for fat, Mexico for acid(I think)....the filming is gorgeous and I learned a lot about how various foods are made. 3y
