Salt, Fat, Acid, Heat
Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking | Samin Nosrat
A visionary new master class in cooking that distills decades of professional experience into just four simple elements, from the woman declared Americas next great cooking teacher by Alice Waters. In the tradition of The Joy of Cooking and How to Cook Everything comes Salt, Fat, Acid, Heat, an ambitious new approach to cooking by a major new culinary voice. Chef and writer Samin Nosrat has taught everyone from professional chefs to middle school kids to author Michael Pollan to cook using her revolutionary, yet simple, philosophy. Master the use of just four elementsSalt, which enhances flavor; Fat, which delivers flavor and generates texture; Acid, which balances flavor; and Heat, which ultimately determines the texture of foodand anything you cook will be delicious. By explaining the hows and whys of good cooking, Salt, Fat, Acid, Heat will teach and inspire a new generation of cooks how to confidently make better decisions in the kitchen and cook delicious meals with any ingredients, anywhere, at any time. Echoing Samins own journey from culinary novice to award-winning chef, Salt, Fat Acid, Heat immediately bridges the gap between home and professional kitchens. With charming narrative, illustrated walkthroughs, and a lighthearted approach to kitchen science, Samin demystifies the four elements of good cooking for everyone. Refer to the canon of 100 essential recipesand dozens of variationsto put the lessons into practice and make bright, balanced vinaigrettes, perfectly caramelized roast vegetables, tender braised meats, and light, flaky pastry doughs. Featuring 150 illustrations and infographics that reveal an atlas to the world of flavor by renowned illustrator Wendy MacNaughton, Salt, Fat, Acid, Heat will be your compass in the kitchen. Destined to be a classic, it just might be the last cookbook youll ever need. With a foreword by Michael Pollan.

#Naturalitsy December #buddyread

🥣 Did you enjoy this book and the author's style?
🥣 Have you learnt anything new?
🥣 Have you tried any of the recipes?

Next up is our joint winner for food - Ultra-processed People by Chris Van Tulleken, starting 1st January.

IndoorDame I loved this so much! I haven‘t tried any of her recipes yet, though I‘ve earmarked some I‘m interested in. But I have taken her basic principles (especially about using acid) to help me be more adventurous when throwing things together in the kitchen. I used to do a lot of kitchen sink cooking when I was younger, and I‘ve shied away from it in recent years but, this has let me get back to that style a bit. 4mo
Bookwormjillk I‘m still working on this, but hopefully will finish tonight (wild New Year plans I know.) I started reading this earlier this year and loved her Caesar salad recipe. So much lighter and more flavorful than what the usual restaurant salad is. Actually I should make it again this week. Here‘s my recipe review if anyone is interested http://www.allthebooksihaventread.com/blog-1/2023/4/7/salt-fat-acid-heat-ceasar-... (edited) 4mo
yourfavouritemixtape I have not managed to finish this but I am already looking forward to getting back to it. I will definitely cook a couple of recipes from it! 4mo

yourfavouritemixtape @IndoorDame Kitchen sink cooking ❤️ 4mo
yourfavouritemixtape @Bookwormjillk that sounds like the best of New Year‘s plans :) will definitely try that Caesar‘s salad! 4mo
Deblovestoread I haven‘t finished yet but have already learned a lot and am looking forward to trying recipes in the new year 😊 4mo
DebinHawaii I really enjoyed it & tagged many recipes although I have not tried them yet. I have the Caesar Salad recipe tagged—along with several other salad, dressing, sauces & soup recipes. I have always been a “toss everything together” kind of cook & it usually turns out well, but she has me thinking more mindfully about it & having more intention with my ingredients. I also loved all of the graphs & flavor combination ideas! 😋 4mo
AllDebooks @DebinHawaii the graphs and illustrations are so helpful. I've learnt so much from this book. It's really changed my mindset about cooking, less of a chore and more magicky science now. 4mo
AllDebooks @Deblovestoread I imagine all our copies are earmarked with post-it notes 4mo
AllDebooks @IndoorDame glad it's brought you back to your style of cooking. 🩵 kitchen sink cooking 4mo
IndoorDame @DebinHawaii I bought a copy just to have access to all the flavor graphs! And I‘m super excited about the sauce and dressing recipes! 4mo

#Rushathon #OutWithTheOldInWithTheNew #readathon

The downside to having an immense cookbook collection (besides space issues) is that often, cookbooks sometimes get stuck on a shelf & don‘t get read & appreciated. This was the case with this book which I bought after it came out based thanks to NPR & Saveur but never really read until it was a December book for #Naturalitsy #MidwinterSolace What a mistake! I just rated it ⭐️⭐️⭐️⭐️⭐️ & it ⬇️

DebinHawaii …will be moved to a more accessible place of honor. I have been meandering my way through it over December & have SO many pages & recipes tabbed & tagged. Although some of the information, I knew, Nosrat taught me a lot & shares her knowledge in an engaging way. I love learning the how & why of cooking & flavor science. I am now in the midst of watching her show on Netflix & will try several recipes & techniques from the book. Excellent! 🍽️🥣💙 (edited) 4mo
TheBookHippie I love this book. I cook from it often! I never read the whole thing til this month!! 4mo

I really enjoyed this book! I want to buy a physical copy of it so I can refer to it easily when cooking. I learned so much about salt and acid that I started to implement the tips into my cooking. I also listened to the audio while reading the ebook and it was so much fun! Samin Nosrat narrates it and she is a great storyteller!

#wondrouswednesday @Eggs

1. I didn‘t set a numeric goal this year, but I did pretty well with challenges. I completed #pantone2023 and #booked2023 I read most of my #bookspin / #doublespin and #authoramonth books. I did abandon #roll100 fairly early, & eventually bailed on my year-long buddy reads of Clarissa & Les Miserables

2. 5⭐️ reads for December were Sing Unburied Sing and the tagged book

3. Hoping to reread Lilian Boxfish for New Year‘s

Alwaysbeenaloverofbooks I love Sing 💔 4mo

My #bookspin this month was the #naturalitsy buddy read, and it‘s been great! In the intro Samin brags that reading her book is more like attending a cooking class than reading a cookbook, and that claim is totally born out. But what impressed me most is that she‘s a teacher who teaches to beginners and experts at the same time which is such a rare talent! I learned a lot from this, and I‘ll definitely use it as a reference book going forward.

TheAromaofBooks I enjoyed this book so much when I read it from the library that I bought my own copy for reference! Honestly, I was kind of scared of salt before I read this and have been amazed at how much better some of my staple dishes taste now that I'm willing to give them a bit more of a salt hit! 4mo

Someone (I think from the Eastern European side of my family) taught me to soak raw onion in water to lessen the bite, which is totally a good trick, but the number of times I‘ve heard Samin say to macerate onion in vinegar or citrus in the last few recipes… I can taste the difference in my head without even having done it yet! This one is going to stick with me! #naturalitsy

Kimberlone Haha I do remember maceration being a repeated motif throughout this book. And the Maillard effect! 4mo
IndoorDame @Kimberlone luckily I looked both up the first time she mentioned them to make sure I was clear on what they meant since they ended up being favorites 😂 4mo
Cheryl_Russell_BookNotes I need to pick this one back up. 4mo
IndoorDame @Cheryl_Russell_BookNotes so worth it! I love teachers who cater to beginners and experts at the same time! 4mo

🥘 Are you learning any new cooking skills?
🍳 Have you tried any of the recipes yet?
🥘 Would you recommend it?

All are welcome to join in the discussion.

MegaWhoppingCosmicBookwyrm I haven‘t been able to get my hands on a copy, unfortunately. I‘ll have to bow out for this one. 4mo
IndoorDame I‘m loving this so much! Haven‘t tried any recipes yet, but hoping to in the next few weeks. I‘d never heard cooking temperature broken into the ranges she gives before. I think that will be a game changer for me in successfully improvising new recipes. 4mo

AllDebooks @IndoorDame I've learnt so much. I'm hoping to try some recipes over the holidays x 4mo
Larkken I had a hard time getting into this about a year ago - I think I was expecting a more traditional cookbook? So I borrowed the audiobook on a whim this time since I wasn‘t expecting a bunch of recipes and really enjoyed it! Now I have a better feel for what to revisit to get more concrete advice or tips or whatever. Glad this challenge gave me the push! 4mo
TheBookHippie I‘ve cooked through this already but I love just reading it this time around. The whole chicken is my favorite. 4mo
yourfavouritemixtape I absolutely love it. I have learned so much and the approach not just to tell the cook what to do but also why you‘re doing this is so good. I haven‘t tried any recipes but I have started to put way more salt into my pasta-water :) 4mo
AllDebooks @Larkken She's a great teacher. Glad you got more from it, the second time around. 4mo
AllDebooks @TheBookHippie it looks so good 4mo
Bluebird I loved this book! The author narrated the audiobook. Her enthusiasm was infectious! Not sure I would have read the whole thing in print/digital version. I‘m not much of a cook, but I may start doing more-she has motivated me. I have issues with her aggressive use of salt, but appreciate all the information. I went out and bought the book—it‘s a great reference. I also bought a copy for a friend 😉 4mo
AllDebooks @Bluebird That's great. She is very inspirational. 4mo
Mitch This one changes how I think about food and cooking completely 4mo
AllDebooks @Mitch I've had that reaction, too. I'm itching to try her methods over Christmas break 4mo
vonnie862 I absolutely want a physical copy of this book! I bought the ebook and borrowed the audiobook from Libby. It was so much fun to listen to Samin while I read along on my ereader. I learned many new things, especially about salt and acid. I am looking forward to checking out the recipes and seeing more of part 2. 4mo

Verdict on two similar cake recipes: Samin Nosrat is the winner by a slight margin with Lori‘s Chocolate Midnight Cake. The biggest difference in the end result has to do with prep method. Crazy Chocolate Cake is done in one bowl so it‘s very quick to make. Light-coloured crumbs showed that mixing was not thoroughly done. It rose higher, was slightly sweeter and less moist than LMCC. LMCC used more bowls & implements; results are worth it.

Lindy For bakers with inquiring minds, I made an apple juice reduction caramel to join the two layers, and then a simple ganache icing. (edited) 3y
Soubhiville Mmmmmmm 3y
TheKidUpstairs The real winner is you and whoever got to join you in tasting!!! 3y

readordierachel Apple juice reduction caramel sounds amazing! Though I must admit that caramel is my nemesis. 3y
Sace That Caramel reduction sound like the real winner. And that tea cozy 😍 3y
Reggie 😋Apple juice reduction caramel! Lol everything sounds so delicious! 3y
Lindy @Sace I made the tea cozy from a vintage pattern sent to me by @LeahBergen ; in one of my Litsy photos, she recognized the pattern in a cozy I‘d purchased in Dunedin, NZ in 2002. That one was getting rather shabby from use. 3y
Sace @Lindy What a lovely knitting story! ❤️ 3y
Lindy @TheKidUpstairs It was a dear friend‘s birthday. Indoor gatherings are fraught, so there were only 4 of us (2 couples). We sang happy birthday very softly. Heather removed each of the (oversized) candles individually to blow them out without blowing on the cake itself. Friendship is one of the best things in life. 3y
Lindy @readordierachel @Sace @Reggie Apple juice caramel is so easy (and I have many litres of juice from my tree, currently in the freezer). Boil 4 cups of juice until only a half cup is left, then stir in 2 tablespoons of butter and a pinch of salt. 3y
erzascarletbookgasm Yummm 😋 3y
GatheringBooks I love everything here! Yum! 3y
batsy Oh my god it looks so good! Thank you for the details on the cake; I'm drooling. And the birthday party must have been wonderful, cosy and intimate 🎂❤️ 3y
BiblioLitten Yum!! 🤤😍 3y
LeahBergen Yum! I‘ll definitely be trying it now (and I smile whenever I see that tea cozy 😘). 3y
JennyM That looks so yummy!!! 3y
Lindy @LeahBergen Don‘t forget to tag me when you make this cake. It‘s easy to halve if you just need an 8-inch cake. 3y
Andrew65 Making me very hungry for chocolate cake 😋😋😋😋😋 3y
Cathythoughts Lovely picture ✨ 3y
TheAromaofBooks Oooo thank you for the update!! So fun!! 3y

Kitchen science experiment today: comparing two similar recipes. My mom‘s Crazy Chocolate Cake (left) and Samin Nosrat‘s Lori‘s Chocolate Midnight Cake. Verdict must wait until this evening, after the layers have been made into a birthday cake.

Sace They both look delicious! I hope you share the verdict. I'm very curious! 3y
Andrew65 @Sace I agree, they both look delicious! 3y
GatheringBooks Wow! Yummilicious, I bet! Chocolate cakes are the best! 3y

TheAromaofBooks I've been wanting to try Nosrat's recipe, so I'm intrigued to hear how you like it!! 3y
LeahBergen I‘m interested in the final verdict as I‘ve been planning on trying Nosrat‘s recipe, too. 👍🏻 3y
Reggie Please show plates with crumbs later or someone with mouthfuls of cake barely containing the deliciousness who has chocolatey smudged lips. Lol, looks good, Lindy! 3y
batsy What @Reggie said! 😋 3y
Centique @Reggie @batsy sometimes (for comfort reasons) I watch an Instagram account which just shows someone getting a first spoonful of chocolate cakes and desserts. 🤷🏻‍♀️ Looking at chocolate helps! 😆 3y
Lindy @Centique 😁👍 3y

I didn't expect to enjoy an audio book about food so much, but this was fascinating! I plan to buy a physical copy so that I can refer back to it when I'm cooking.

Watched this TWICE on Netflix 👩🏽‍🍳
Now I need the cookbook 🤣 “need”

Heatherfeather I LOVE LOVE LOVE that show. It is so JOYFUL. I have the cookbook but have yet to crack it because I've fallen down the hole of just making what I know. 4y
TheBookHippie @Heatherfeather currently I watch it while I cook it 🤣👩🏽‍🍳 4y
kspenmoll Loved this show! She is wonderful! The book is just as fun. 4y

I would never have found this book without Litsy, so thank you to everyone who reviewed it - I absolutely loved this one! I am not an instinctive cook, so the way this book breaks down cooking to four basic elements really appealed to me. Definitely see myself referencing this one regularly.

Bonus: picture of my messy pantry!! 😁

Leftcoastzen Looks beautiful to me! 4y
MicheleinPhilly You think that‘s messy? 😂 If you haven‘t seen it yet, I highly recommend the Netflix series. She is so charismatic and her love of food just leaps off the screen. 4y
wanderinglynn If you think that‘s messy, I‘d hate for you to see my kitchen. 😳😂 4y

TheAromaofBooks @Leftcoastzen @MicheleinPhilly @wanderinglynn - Thank you!! In fairness, the space offscreen to the left has significantly more items piled up! 😂 4y
TheAromaofBooks @MicheleinPhilly - Oooo I didn't know that she had a Netflix series!! I will have to check that out! I so enjoyed her warm, helpful voice throughout the book - she never came across as condescending, but instead seemed genuinely excited to share the information. She explains “basic“ things without making me feel stupid for not already knowing the information. 4y
MicheleinPhilly You will love it. That warmth and excitement is all there. It‘s like a big, warm hug. 4y
iread2much The Netflix series is great! 4y
Bookishlie I have this but haven‘t read it yet. I‘ll need to move it up on my tbr:) 4y
LeahBergen @MicheleinPhilly Yes! The series is lovely. 💞 4y
TheAromaofBooks @Bookishlie - It's a nice book to read in chunks rather than straight through, as it's a lot of information to assimilate. I started with a library copy but realized I wanted my own so I could both mark it up and also refer back to it. 4y
Reggie Lol, messy? What?!!! Lolol 4y
Smrloomis I‘m with @Reggie - that pantry is beautiful! 😂 4y
TheAromaofBooks @Reggie @Smrloomis - Thank you!! 😁 4y

#BookReport - This week got a little crazy, but I still managed to wedge some reading in!! I read the first two books from the David Raker series, but decided not to continue on. While decent mysteries - and I like Raker as a character - both books were about a completely sadistic psychopath and just... sometimes people who disappear haven't been kidnapped by someone who likes to chop people up, you know? I bailed on The Castle in the Attic, ⬇

TheAromaofBooks (cont'd) it wasn't a bad book, it just wasn't for me. I've owned it since 2004, so at least it can finally head off to the giveaway bin! Just started House of Dreams this morning, and I'm still working on the tagged book and P&P, although I'm pretty behind on the latter!! Work is still ramping up, so I probably need to adjust my reading expectations somewhat...

rabbitprincess I can‘t read books about creepy serial killers anymore, especially if the book spends a lot of time in their head 😕 4y
TheAromaofBooks @rabbitprincess - Same!! Luckily these didn't really spend a lot of time with the killer, and they didn't get overall graphic with the details but still... I just wasn't expecting a protagonist who looks for missing people to only find the missing people at the mercy of creepy serial killers! 4y
Cinfhen I‘m totally with you on letting certain books/series go....as we evolve and grow so do our reading choices🧡 4y

#cookbook #lifestyle #heat

Today is so hot and humid- the blistering kind. The kind that has my face in a fan. That kind that has sweat rolling off me. Despite all that, cooking from this book tonight. Just her basic pasta sauce. Garden tomatoes, basil, lettuce for salad from my neighbor‘s garden.
Saw her show when it came out a few years ago. She was wonderful!

#bookmail from yesterday 📚📬 I am so excited to get this book as I keep picking it up at Costco & putting it back down. I got a $20 credit for products sold & shipped Amazon for listening to 3 books on Audible through March & it is finally mine for about a $1 for the taxes.🤗
I geek out over the science of flavors & cooking! 🤓🥄

cariashley It‘s so good!! I just started listening to her new podcast and it‘s also 👌 4y
CafeMom There is also a Netflix series. I enjoyed it. 4y
