Tamra @tpixie my daughter doesn‘t like very spicy food, so I only put in a teaspoon. But the rest of us added hot sauce to our bowls. So I would say it depends on how spicy you want it. 😊 I also made other closely related substitutions based on what we had, including a half can of fire roasted tomatoes. 3mo

Day 22 #adventrecommends

Today I'm doing something a little different. I've been pursuing a healthier lifestyle in 2018 & whenever I'm in a food rut, this book always comes to the rescue. Since this is the time of year when people start making health resolutions, I thought this might be a good pick. I haven't read Homolka's other recipe books, but I'm sure they're just as delicious!

Huevos Rancheros. I got the recipe from the Skinny Taste blog so I don‘t know if they are in the cookbook but I‘ve liked every recipe of hers I‘ve tried. I subbed avocado for the topping due to the great Romaine lettuce contamination & wilted cilantro.

So I tried my hand at making the shrimp n grits recipe from The Skinnytaste Cookbook, although it doesn't look as good as it does in the book, it actually turned out good (despite my chaotic/disorganized cooking techniques)!

My oldest is heading back to the dorm for his sophomore year at UCONN tomorrow. For his last meal at home for a while, he requested chicken enchiladas. I use the recipe from this cookbook and they are awesome. We are ready to chow down!

Today at book club everyone brought a cookbook and made a dish from their book for our Christmas potluck. Very fun idea! Someone made the most yummy wassail. I made the apple crisp from The Skinnytaste Cookbook.
