I‘ve been having fun cooking some of things from the Love and Lemons Cookbook. Tonight was Mexican Corn Salad and Pickled Onions. Also salsa Fresca, diced avocado, and a cheese quesadilla, not from this cookbook. Yum!

Full of veggie recipes, many vegan ones too, it‘s set up in sections about each fruit or veggie. I can‘t wait to explore more! Also, the author is from Austin, local to me. 😋

The dressings chart from this cookbook I borrowed has paid off! I modified one and came up with this guac & cilantro version. So many uses - thin or thick. 😋 Last night I put it on a spicy shrimp salad.

Vegetarian cookbook based on Donofrio's blog. She urges "cooking backwards" — start with what you have, or some beautiful thing from a market & then figure out how to build from there. It's the same approach that I take, which is why I appreciate cookbooks that have ingredients indexes. Lots of fresh herbs and citrus: "seasonal food still needs seasoning." Many recipes list vegan or GF options; the ones I tried were easy & delicious.

After my exciting weekend, I'm back to cooking on a small scale. Today I made mint pesto (with pistachios and green peas) served on toast with sliced roasted beets.
