3 posts | 1 read | 9 to read
Get answers to all your cooking science questions, and cook tastier, more nutritious food using fundamental principles, practical advice, and step-by-step techniques. Where does the heat come from in a chili pepper? Why is wild salmon darker than farmed? Does searing meat really "seal in" the juices? A good recipe goes a long way, but if you can master the science behind it, you'll be one step ahead. Using full-color images, stats and facts through infographics, and an engaging Q&A format to show you how to perfect your cooking, The Science of Cooking brings food science out of the lab and into your kitchen. Topics include meat and poultry, seafood, dairy, pulses and grains, fruits, vegetables, spices, herbs, baked goods, and more, making it perfect for perfecting everyday cooking as well as for special meals.

I thought this was an interesting book. It gave some good information about meat as well as other random things like rice, salts, and flour. I think there's more to be learned than in this book, but I enjoyed all the pictures!

Spending my day without kids reading and walking. Gotta try to get 10 miles at least one of these weeks!
This book is awesome and is on my "to buy" list to add to my kitchen library. So much good information.

#TBRtemptation post 8! Just released, this huge, lush tome seems like that ultimate guide in the whats, whys, and hows of cooking. I want!!! The food scientist answers so many questions: which veggies to eat raw; poaching the perfect egg; why chocolate tastes so good; reheating rice; making succulent fish every time; etc. Chapters cover various food types, nutritional myth-busting, and cooking implements. #blameLitsy #blameMrBook 😎
