Here are my finished Saint Nicholas biscuits (stars, hearts, houses and Christmas trees), in front of a song book opened at the page of La légende de Saint Nicolas, a famous song about three children killed and salt-cured by a butcher. Fortunately, Saint Nicholas brings them back to life 👍

I am baking biscuits/cookies for Saint Nicholas's feast on the 6th. I usually do it on the day, but not this time: I am visiting my daughter this weekend and I want to bring her some because, with a newborn to look after, I doubt she'll have time to make her own...

Dilara Gâteaux de la Saint-Nicolas

250g flour
120g brown sugar (Demerara, soft brown, or a mixture of the two)
pinch of salt
1 tsp baking powder
120g butter
1 egg
milk - a couple of tbsp if necessary for the dough to hold

Mix the ingredients, roll into a ball and refrigerate for at least 1 hour.
Roll out the dough and cut out shapes.
Bake for 10-15 minutes, gas mark 5-6.

We typically eat them plain, but you can decorate them with icing if you want.
