Cooking for Geeks
Cooking for Geeks: Real Science, Great Hacks, and Good Food | Jeff Potter
1 post | 1 read | 5 to read
Are you the innovative type, the cook who marches to a different drummer -- used to expressing your creativity instead of just following recipes? Are you interested in the science behind what happens to food while it's cooking? Do you want to learn what makes a recipe work so you can improvise and create your own unique dish? More than just a cookbook, Cooking for Geeks applies your curiosity to discovery, inspiration, and invention in the kitchen. Why is medium-rare steak so popular? Why do we bake some things at 350° F/175° C and others at 375° F/190° C? And how quickly does a pizza cook if we overclock an oven to 1,000° F/540° C? Author and cooking geek Jeff Potter provides the answers and offers a unique take on recipes -- from the sweet (a "mean" chocolate chip cookie) to the savory (duck confit sugo). This book is an excellent and intriguing resource for anyone who wants to experiment with cooking, even if you don't consider yourself a geek. Initialize your kitchen and calibrate your tools Learn about the important reactions in cooking, such as protein denaturation, Maillard reactions, and caramelization, and how they impact the foods we cook Play with your food using hydrocolloids and sous vide cooking Gain firsthand insights from interviews with researchers, food scientists, knife experts, chefs, writers, and more, including author Harold McGee, TV personality Adam Savage, chemist Hervé This, and xkcd "My own session with the book made me feel a lot more confident in my cooking." --Monica Racic,The New Yorker "I LOVE this book. It's inspiring, invigorating, and damned fun to spend time inside the mind of 'big picture' cooking. I'm Hungry!" --Adam Savage, co-host of Discovery Channel's MythBusters "In his enchanting, funny, and informative book, Cooking for Geeks (O'Reilly), Jeff Potter tells us why things work in the kitchen and why they don't." -- Barbara Hanson, NewYork Daily News

Oh, Littens! How on earth do you manage to read so many books? Looking for practical suggestions on getting more time to read. When I'm not at the FT day job, I seem to spend all my time cooking, cleaning, etc. I do listen to audiobooks on my commute and while I cook / clean whenever possible, but I'm starved for the printed page. How do you find YOUR reading time?

OSChamberlain I keep a book with me at ALL TIMES. The second I can sit down or just have time to kill, even if it's just a few minutes, I pull out the book. 7y
MarriedtoMrT My house is an atrocious mess. I watch almost no TV so I never know what shows/movies my coworkers are talking about. And I often stay up way too late and pay for it for days after. Not great advice, sorry! Sometimes I read more than others and I prioritize it because I will be horrible to be around if I don't take that slice of time for myself. 7y
KimM You schedule it. Just like someone might schedule a round of golf. Otherwise there is never "free time". 7y

BookishFeminist Schedule. I also listen to audiobooks while I'm working (ones that I don't need to pay close attention to). I read in most of my spare time. I always have a book on my phone so I can read while I'm out and about when I find myself waiting in line. It's possible but sometimes it takes awhile to adjust! I also like to read a few books at a time (easier than it seems if they're diff formats) so I can switch back & forth and not burn out on one. (edited) 7y
LauraBrook I always have at least one book with me. One night a week I don't turn on the tv, and I read in bed (w kindle) every night. It helps that I don't have kids and am single, though. Plus, like @MarriedtoMrT my house is always a mess. And I have autoimmune issues, so there's a fair amount of laying down/quiet time in my life. 7y
BookishFeminist http://bookriot.com/2017/03/30/tips-and-tricks-on-how-to-read-more/ and http://bookriot.com/2014/08/05/book-polygamy-read-one-book-time/ are both great full of great tips for how to squeeze in more reading time & read multiple books at once. Many of these tips helped me when I had the same question as you a couple years ago. 7y
TrishB @MarriedtoMrT same 😀 no clue about telly generally. House a mess. Just about cook for the kids. My reading time is important. 7y
Dragon I always have books in my car. I leave a bit early for work so I can read in the car for 20-30 minutes, I also have a book at work that I read during my lunch break. I always have books on my phone in case I'm standing in line and need to read 😀 7y
LauraBeth I don't watch a lot of tv so my evening "downtime" consists of reading. I always have a book with me wherever I go and I also set daily reading goals for myself (e.g. Read 100 pages). 7y
Redjewel_7734 Such great recommendations! I have the same problem & often feel no matter how hard I try to fit reading in I never read as much as I want. Hopefully all of these can help me improve 😊I also have to quit letting myself be made to feel guilty about taking tome to read by those around me who don't understand its importance to me. 7y
TrishB @Redjewel_7734 people never seem to feel guilty about binge watching telly series or box sets, so don't feel guilty about reading. Enjoy 😀 7y
Annl A few years ago, I realized that reading was one of my loves and yet, I was not making time for it. So, I start every day with coffee and a book and repeat the same when I come home at the end of the day. I also have a book with me wherever I go! 7y
Grrlbrarian Thanks for the recommendations, everyone! I especially appreciate the links, @BookishFeminist I already read multiples and watch little TV, but reminders are good - as is the info I haven't considered. Thanks again, @BookishFeminist @OSChamberlain @MarriedtoMrT @KimM @LauraBrook @TrishB @Dragon @LauraBeth @Annl @Redjewel_7734 7y
Gissy I have a book with all the time even when I know that it will be impossible to read like when I'm going to run or swim but is there just in case. I wake up early so I can read at least 45 minutes while I drink my coffee. My contact with tv is almost zero and I practically have no social life with humans 😊well I go out but I love my solitude and silence space. 7y
