I have been on a major soup binge for the last few weeks. I found this great recipe for an extremely yummy cauliflower soup. I used vegetable stock and almond milk - simply Delish! Use an immersion blender to give this soup a wonderful creamy texture. Lots and lots of easily modifiable to vegetarian and vegan options in this book!

I am soooo over this winter. Blizzard and a feel of -33 and working through it made me drink. And I never drink. At least I got to look through a book of yummy food! I always like watching Delish‘s videos on Facebook, so when I saw it at the library I didn‘t hesitate to grab it. Now if only someone else would cook for me 😁.
