Milk!
Milk!: A 10,000-Year Food Fracas | Mark Kurlansky
Mark Kurlansky's first global food history since the bestselling Cod and Salt; the fascinating cultural, economic, and culinary story of milk and all things dairy--with recipes throughout. According to the Greek creation myth, we are so much spilt milk; a splatter of the goddess Hera's breast milk became our galaxy, the Milky Way. But while mother's milk may be the essence of nourishment, it is the milk of other mammals that humans have cultivated ever since the domestication of animals more than 10,000 years ago, originally as a source of cheese, yogurt, kefir, and all manner of edible innovations that rendered lactose digestible, and then, when genetic mutation made some of us lactose-tolerant, milk itself. Before the industrial revolution, it was common for families to keep dairy cows and produce their own milk. But during the nineteenth century mass production and urbanization made milk safety a leading issue of the day, with milk-borne illnesses a common cause of death. Pasteurization slowly became a legislative matter. And today milk is a test case in the most pressing issues in food politics, from industrial farming and animal rights to GMOs, the locavore movement, and advocates for raw milk, who controversially reject pasteurization. Profoundly intertwined with human civilization, milk has a compelling and a surprisingly global story to tell, and historian Mark Kurlansky is the perfect person to tell it. Tracing the liquid's diverse history from antiquity to the present, he details its curious and crucial role in cultural evolution, religion, nutrition, politics, and economics.

I can‘t figure out how Kurlansky decided on chapter titles. They never made sense to me - like how the chapter on butter has almost nothing about butter in it... but this was so interesting and made me very hungry!

TIL that mare‘s milk doesn‘t curdle like other milk and doesn‘t make good cheese.

Jester continues to be a good reading buddy who insists on sleeping with her paws on my face.

If you think you know what you're drinking you should read this. It's a really well researched book, very entertaining. I now know so much about cows, butter, cheese and yogurt; wicked corporations and the horrible governments that support them; milky culture (pun) from so many countries. Don't be afraid, reading this will not stop you enjoying milk, you'll just want better milk.

Thanks to netgalley for this edition! I have read Salt, but enjoyed this one more. This traces the history of people drinking milk (as opposed to making cheese and yogurt), the production and use of milk, milk scandals, the animals used, the farmers, and more. Lots of recipes too, but the formats were generally odd in this version. Much of the book looks at post-1800 US, so very relatable for me. #nonfiction #food #netgalley

Well I finally caved. I bought a kindle. I already have some netgalley books and my husband‘s shared list. I get migraines reading on my phone or computer—this is soooo much better. I will no longer be hauling actual books to track meets, on trips, or to my car appointment tomorrow. Just wish I could figure out where the table of contents are—even my husband doesn‘t know!

britt_brooke I love my kindle! So happy to hear you‘re a fan so far. 💚 6y
Tamra I was concerned about glare too, but was glad to find it isn‘t like my phone. 😊 I‘ve been stocking mine with deals to read while camping. Transportable library - woot! 6y
SassyBookworm I hope you enjoy your new kindle!!! What do you mean table of contents? Like your book list? I tagged a book that may help too! Hopefully with some help from some of us Littens we can get you fixed up 😁 6y
DreesReads @Chrysta23 I mean the actual ToC for a book. I like to peak and see how long chapters are when I start them—and I can‘t figure out how! 6y
SassyBookworm @AudreyMorris ohhh when you get into a book tap the upper part of the page, so like your home button brightness ect comes up. Tap the ‘Go To‘ button and that should have your books table of contents. ☺️ Let me know if that works! 6y
