First grilled pizza attempt from Pizza Night! Surprisingly easy! The tricky part is getting the top nice and done. We used the Hatch Chile and Corn recipe (meant to be on a Neapolitan in a pizza oven - we‘ll try it that way later), and instead topped the grilled thin crust. #mtcookbook

Saturday morning means time to try a new recipe for a late and leisurely breakfast. I don‘t own a waffle iron, but I easily adjusted the recipe to bake waffle sticks instead. The batter includes blended dates, and then the waffles are served with a delicious toffee sauce.

This is the Brown Sugar Almond Pound Cake that I served at Mother‘s Day brunch with macerated berries and whipped yogurt.
It is entirely possible that I will umami myself to death.
Puréed the preserved lemons I made (from the Meyer lemons that grew on my tiny tree) to make preserved lemon paste.
Paired with Kerrygold Dubliners cheese on a pretzel cracker, it is divine.

While I really like the layout and the cute graphic for nutrition information, this is not a cookbook for me. Low-carb in this case means using chick pea flour for all breads, cauliflower rice instead of regular rice and vegetables instead of pasta.
I only wanted to make about 10-12 of the 75 recipes. But the ones I made were all good and one was amazing. I now follow her on social media, hoping to collect the handful of amazing recipes.
