#Mtcookbook on a roll! Enchiladas for dinner last night. The sauce could use more heat for husband and I, but that‘s adjustable by adding a hotter chile powder.

We fell in love with the food in NM - couldn‘t find a bad meal if we tried. 😋 The best is anything “Christmas”, with both red & green chile sauces.
