Another #cookbook that downplays its vegetarian-ness, as if avoiding the use of an unpleasant word. Content is great, using ordinary ingredients (lots of beets!) & simple techniques. Ingredient lists are in small font, unfortunately hard to scan, but no other complaints. Lovely photos, some cutesy names (Twinkle, Twinkle Jeweled Rice), a few unique takes on classics (Grilled Caesar Salad with Chickpea Croutons). Practical weekday menu advice.

Beet hummus. It‘s a revelation! Recipe is in the tagged cookbook. All you have to do is throw some roasted beets and capers into the food processor when you make hummus.

This is the kind of cookbook that inspires me to riff on the author‘s recipes. Each chapter starts with one dish, three ways. Simple Sides & Small Plates starts with roasted beets, for example. I like the idea of roasted beets with avocado, dressed with olive oil & lime; those are the things I kept the same. Substituted pine nuts for sesame seeds, and a heap of fresh herbs for the ginger. Also added finely chopped zucchini because of a glut. Yum.

Spicy-Sweet Pumpkin Seed Snacks. The first recipe that I‘ve tried from this cookbook turned out well, so that bodes well.

Lindy @EricQiao You can buy hulled pumpkin seeds; that‘s what I used for this recipe. But regular pumpkin seeds in their shells are also edible. Rinse off the stringy bits, toss the seeds with oil and salt, and roast for 10 minutes on a tray in the oven. 6y

I have been sooooo behind posting my read titles on here. Ack. Finished this last night and it looked so cool, I think I have to get my own copy. It says "vegetarian" in the description but quite frankly for the exception of like, 5-6 recipes, they're all vegan. Only a couple have cheese or eggs in them. This is the kind of simple, modern plant-based cuisine I have been craving. Bravo ?✨

Was planning on a cookbook reading marathon for the rest of the night, but then I made several mistakes, in which I 1) laid down 2) pulled a blanket over me 3) took glasses off to really get comfy with my pillow. So now I'm wondering why on earth it's so hard to read big books under blankets. Does anyone have any tips for reading positions when you're under a dark blanket and don't want to move? 😂 #butactually
