Hotbox: Inside Catering, the Food World's Riskiest Business
Hotbox: Inside Catering, the Food World's Riskiest Business | Matt Lee, Ted Lee
4 posts | 1 read | 3 to read
Matt Lee and Ted Lee take on the competitive, wild world of high-end catering, exposing the secrets of a food business few home cooks or restaurant chefs ever experience.Hotbox reveals the real-life drama behind cavernous event spaces and soaring white tents, where cooking conditions have more in common with a mobile army hospital than a restaurant. Known for their modern take on Southern cooking, the Lee brothers steeped themselves in the catering business for four years, learning the culture from the inside-out. It's a realm where you find eccentric characters, working in extreme conditions, who must produce magical events and instantly adapt when, for instance, the host's toast runs a half-hour too long, a hail storm erupts, or a rolling rack of hundreds of ice cream desserts goes wheels-up.Whether they're dashing through black-tie fundraisers, celebrity-spotting at a Hamptons cookout, or following a silverware crew at 3:00 a.m. in a warehouse in New Jersey, the Lee brothers guide you on a romp from the inner circle--the elite team of chefs using little more than their wits and Sterno to turn out lamb shanks for eight hundred--to the outer reaches of the industries that facilitate the most dazzling galas. You'll never attend a party--or entertain on your own--in the same way after reading this book.

#til Behind every smooth seeming catered event there is a flurry of activity, up to and including total chaos, happening behind the pipe and drape. #nfnov

8little_paws My husband was one of the chefs catering for all the bands at Lollapalooza 2016 (I think...might have been 2015) he said that weekend he got about 3 hours of sleep each night and that it was endless work. 4y
TheAromaofBooks I worked for several years for a small caterer, and it definitely changes your perspective - not whenever I go to a catered event I find myself watching the background activity! 4y
BookNAround @8little_paws After finishing this book, I cannot even begin to imagine how your husband managed to get through that weekend! 4y

BookNAround @TheAromaofBooks I‘m so curious now. Of course, we don‘t get invited to many catered events so I probably won‘t have too many opportunities to even try to see the background stuff. 4y
8little_paws @booknaround he was also like not even 30 at the time so that probably had something to do with it LOL! He also cooked for/toured with Van Halen on one of their summer tours (either 2015 or 2016...whatever year he didn't do Lolla) and said that was a real trip too. (edited) 4y
BookNAround @8little_paws I bet he has some pretty good stories! 4y
TheAromaofBooks Just start crashing weddings, and if anyone calls you out, tell them you're doing research. ;-) 4y

8little_paws @booknaround Less than you'd think. he said Van Halen in the mid 2010s is just your average group of late middle aged guys 😂 4y

After putting this on in two separate weekly forecasts, I am actually going to open it. Here‘s hoping it grabs me and doesn‘t let me go so it doesn‘t make an appearance in next week‘s forecast as well. 😂 #nfnov
