Every year, Frontera Grill in Chicago does a Dia de los Muertos altar featuring friends, family and celebrities who passed from this life during the year. Here is part of this year‘s display. This shot has Glen Campbell and Bill Paxton.
Dear self, I made you a valentines dinner to end all valentines dinners. That queso? From scratch. Those tortilla chips? Oven baked in your own oven. That guacamole? The best you'll ever taste. And the piece de resistance: chicken enchiladas. You're welcome, self. You're welcome.
So not sure how "Mexican" this turned out, and I'll have to work on it falling apart coming out of the dish, BUT it sure tasted good!
